Last summer, when we stopped over in New Orleans, we ate at Cafe Du Monde and tried their famous beignets (a square piece of dough, fried and covered with powdered sugar) The kids loved them.
The Original Cafe Du Monde Coffee Stand was established in 1862 in the New Orleans French Market.
So, when I saw a mix at the local grocery store (Walmart). I bought a box and came home and make beignets for dessert. I was nervous to cook with oil since a friend from church burned her kitchen down a few months ago while cooking with oil. Anyways, the question is for those of you that have cooked donuts or scones. Why were these not fluffing up in the middle? Do they need to be stretched or was the oil not hot enough? My kids loved them no matter fluffy or not. I think Garrett ate 17 of them...
Max and Madelyn. She loves to play with him like he is a doll. She loves to put him in the baby crib with her dolls. He is such a funny dog. When he goes on walks with us he likes to either ride in the stroller or make sure Madelyn is right by him. If she runs ahead, he is barking to get her to come back.
March 3rd is my SIL Julie's B-day. Julie is a great friend. She makes you feel right at home. We enjoyed our stay with her this summer in Ohio. She loves her kids and they adore her. Happy Birthday, Julie!
March 8th is my brother Jeff's birthday. Jeff can be very serious but he can also have a good time. He loves to not plan things out but just go and have a good time!! We have been on many trips with him that we just decide last minute to go someplace and then we go. Even if Matt is the slow driver. Jeff's family can stop 5 times and still beat us!! Happy Birthday, Jeff.
And last but not least...my birthday is March 13th. And this year it's on Friday, the 13th!! Matt's mom, sister and niece are flying in on Saturday for spring break. Maybe, we'll wait and celebrate with them.
It's been one year since I started this blog and I have tried to honor my immediate family for their birthday month. So for the next year, I am honoring my friends during their birthday month. Watch out. You'll never know what crazy picture I can find to post.

Hey lady! I can't believe how big your puppy is getting! I am glad to see a new post from you. I sure miss you! Cash was sitting with me and saw your picture and got so excited saying "Nee Nee"!! It was cute!
So...about the beignets. We bought the same boxed brand when we went to New Orleans. I was so excited, got home, and we made them. Sooo flat. Good, but flat. I got my mom a box too, and hers did the exact same thing. I am convinced now that yours were flat that those boxes are a big scam! :) Scones usually do rise. If you don't want to make dough for it, buy the frozen Rhodes rolls, let them defrost, then roll them out, cut them, and fry em up. They work great as a stand by! I made scones actually this week, and was so scared too thinking of Mandy! She has changed my views on oil so much now! I won't even fry chicken! Too scary!!
I'm glad you are blogging again! We have been wondering about Max and just how stinking cute he is! We are finally getting warmer weather... this has been the mildest winter Rexburg has seen in a while though! We got a lot of snow around Christmas, but not much at all since! Can you believe it?!

I am not sure when will be best yet... I know that whole week prior is finals and we have to find out when we have to be out of the apartment... So.. :) Life is going to be crazy, but when I know more about my finals schedule and when we have to move out I will let you know what works best!
I will actually walk for Graduation July 23rd- They have 3 graduations- one each semester- now that there are 3 different tracks.
